The pleasures of sake are very different from those of wine. When drinking wine, Americans are accustomed to looking for a welter of aromas and flavors, mostly fruit, that unite in a complex, intriguing mouthful. You can find diverse aromas and flavors in sake, too, but the emphasis is instead placed on texture, elegance and purity. The joy of sake is not so much in the analysis of flavors but in the different tactile sensations sake offers from sip to swallow.
For me, a sake like Amanoto Tokubetsu Junmai suggests not so much a cornucopia of fruits as much as waterfalls and cool mountain streams. Oh, I could dig up the aromas of flowers and pears if pushed, and I sensed a slight sweetness, but the real payoff is the impression in the mouth, as smooth as polished marble.
